Ingredients for Cheesecake
1. Crust:
• 2 cups graham cracker crumbs
• 5 tablespoons melted butter
• 2 tablespoons granulated sugar
2. Filling:
• 24 ounces cream cheese, at room temperature
• 1 cup granulated sugar
• 2 large eggs
• 1/2 cup heavy cream
• 1 teaspoon vanilla extract
• 1 tablespoon fresh lemon juice
3. Topping:
• 1/2 cup sour cream
• 2 tablespoons granulated sugar
• 1 teaspoon vanilla extract

Instructions for Cheesecake
1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan with butter and dust with cracker crumbs.
2. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until combined and press into the bottom of the prepared pan. Bake for 8-10 minutes, or until the crust is lightly golden brown. Remove from the oven and let cool.
3. Prepare the filling: In a large bowl, beat the cream cheese and sugar until light and fluffy. Add the eggs, one at a time, beating after each addition. Add the heavy cream, vanilla extract, and lemon juice and mix until combined.
4. Pour the filling into the cooled crust and spread evenly. Bake for 40-45 minutes, or until the center is just set.
5. Prepare the topping: In a small bowl, combine the sour cream, sugar, and vanilla extract. Mix until combined.
6. Remove the cheesecake from the oven and spread the topping over the top. Return to the oven and bake for an additional 5 minutes.
